Smoke Fire Chunky Guacamole

"Guacamole is our go-to dip, so I love experimenting with new flavor combinations and this version did not disappoint! The smokiness of the cheese along with the heat from the cayenne perfectly frame the smooth nutty flavor of the avocado and the summery sweetness of the tomato. Ready in just a few minutes, this can be made early in the day then chilled until time for your potluck. If you like a bit more heat, just double the cayenne. Other types of smoked cheese may be substituted if desired. Enjoy!"

Ingredients

  • 4 medium Ripe avocados, peeled, seeded and diced
  • 2 medium Fresh plum tomatoes, diced
  • 1 cup Shredded, smoked cheddar cheese
  • 1 cup Minced white onion
  • 1 tablespoon White vinegar
  • 1 tablespoon Fresh lime juice
  • 1 teaspoon Kosher salt
  • 1 teaspoon White pepper
  • 1 teaspoon cayenne
  • 1 large Ba tortilla chips for dipping

Instructions:

  1. In a medium deep bowl, stir together first four ingredients. In a small bowl, stir together next five ingredients. Drizzle evenly over first mixture. Toss to coat. Serve immediately or cover and chill until serving time.

  2. Serve with tortilla chips for dipping. Serves 10-12.
