Mushroom Moments

"The first and foremost important thing about this side dish is that it goes well with a Barbecue. To make a good barbecue you need a BBQ Buddy! This is where friends come together, mess around, create recipes and make memorable moments. I'm a cook and I know nothing about making fires outside and creating lots of flames, which is why I need a BBQ Buddy. My friend's husband does well as a BBQ Buddy and whilst he is outside grilling something on the Barbecue, my friend and I are in the kitchen - kitchen buddies creating and making extras to go with all that good meat! There is, of course, lots of beer and wine at a BBQ. Some of it goes over the meat, some of it is drunk and most of the time we just laugh and mess around. These are never boring times! This is when the best recipes are created and that is where my Mushroom Moments side dish was created! Hope you enjoy it as much as we did!"

Ingredients

  • 6 large Portabello mushrooms
  • 6 Cherry tomatoes
  • 1 cup Shredded cheddar cheese
  • 1 cup Shredded mozzarella cheese
  • Olive oil for drizzling

Instructions:

  1. Place your mushrooms in an oven proof dish, cap side down.

  2. Drizzle over olive oil.

  3. Slice your cherry tomatoes in half lengthwise. Place these all round the inside of the mushroom cap, around the stem so that they fit snugly.

  4. Top with grated cheddar and mozzarella.

  5. Place in pre-heated oven, 365 degrees F. Bake for about 20 minutes until mushrooms are soft and cheese has melted.
