Crab Cakes with Joe's Mustard Sauce

This classic crab cake recipe is a Mr. Food fan favorite. It even includes the famous mustard sauce recipe from Joe's Stone Crab Restaurant that is simply perfect with these crab cakes.

Notes

Note: For a more mustardy bite, whisk about 1/2 teaspoon more mustard powder into the finished sauce until well blended.


TV Tidbits: Joe's Stone Crab Restaurant in Miami Beach is an institution. My friends there shared their special sauce recipe with me a long time ago and, when I shared it (with their permission, of course) on one of my earliest shows, letters poured in from fans who'd been dying to get their hands on it for years!


Ingredients

  • 3/4 cup plain breadcrumbs
  • 1/2 cup mayonnaise
  • 1 egg
  • 2 scallions, thinly sliced
  • 2 tablespoon fresh lemon juice
  • 1 tablespoon Dijon-style mustard
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Old Bay Seasoning
  • 2 can (6.5 ounces each) lump crabmeat, drained and cleaned
  • 2 tablespoon butter

Instructions

  1. In a medium bowl, combine all ingredients except crabmeat and butter; mix well. Fold in crabmeat, being careful not to break it up. Form into 8 equal-sized patties.
     
  2. In a large skillet, melt butter over medium heat. Sauté patties 3 to 4 minutes per side, or until browned. Serve immediately as is or with tartar, cocktail, or mustard sauce (see below).
     

Joe's Mustard Sauce
Makes about 1 cup

1 tablespoon plus 1/2 teaspoon mustard powder (see Note)
1 cup mayonnaise
2 teaspoons Worcestershire sauce
1 teaspoon steak sauce
2 tablespoons heavy cream
2 tablespoons milk
Pinch of salt

  1. In a medium bowl, combine mustard powder and mayonnaise; beat 1 minute.
     
  2. Add remaining ingredients and beat until mixture is well blended and creamy. Cover and chill until ready to serve.
