Cheesy Chile Squares

These Cheesy Chile Squares pack a punch. Infused with chile and cayenne pepper these delightful squares will be a hit at any party. If you love simple appetizer recipes you will love this one.

Ingredients

  • 4 tablespoon butter
  • 5 eggs
  • 1/4 cup flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • dash cayenne pepper, to taste
  • 2 cup Monterey Jack or Cheddar cheese, shredded
  • 1 cup small curd cottage cheese
  • 1 can (4-ounces) diced green chilies

Instructions

  1. Preheat oven to 400 degrees F.
     
  2. Melt butter in 9" square baking pan in oven.
     
  3. In large bowl, whisk eggs until well blended. Stir in flour, baking powder, salt and cayenne.
  4. Tip baking pan to coat bottom and sides; add melted butter to egg mixture. Add Jack and cottage cheeses, and chilies, and blend well.
     
  5. Pour mixture into buttered pan and bake 15 minutes. Reduce oven temperature to 350 and bake 30-35 minutes longer, until top is lightly browned and a knife in center is clean.
     
  6. Let cool on a rack at least 10 minutes. Cut into 1 1/2 inch squares. Can be made in advance, cover and refrigerate up to 2 days. Can freeze. Serve warm or at room temperature.
