Ingredients

  • 1 lb shredded rotisserie chicken
  • 1 cup red enchilada sauce
  • 1/2 cup barbecue sauce
  • 1 oz onion
  • 1 cup fresh corn kernels
  • 15 oz canned black beans
  • 10 oz pepper-jack-cheese
  • 8 oz tortilla chips
  • 3 lime (cut into wedges)
  • Salt and pepper to taste

Instructions

  1. Preheat oven at 350 degrees Fahrenheit.

  2. Toss together chicken, enchilada sauce, onion, corn, beans, barbecue sauce, and 8 ounces cheese in a bowl.

  3. Season with salt and pepper.

  4. Cover a baking sheet or large skillet with tortilla chips.

  5. Add the chicken mixture.

  6. Top with the remaining cheese and chicken mixture.

  7. Bake at 350 degrees until cheese is melted for 15 minutes

  8. Transfer to a cool serving tray.
