Best Meatball Sliders

Ingredients

  • 2 garlic cloves
  • 1/2 bell pepper
  • 1 celery stick
  • 1 little onion
  • 1 pound extra lean ground beef
  • 2 teaspoon Hungarian paprika
  • 1/2 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 2 tablespoon no salt seasoning
  • 2 tablespoon vegetable oil
  • 1 cup chunky salsa
  • 1 cup water
  • 1/2 cup shredded cheddar cheese
  • 8 small buns

Instructions

  1. In food processor blitz garlic, then add pepper, celery and onion and process until finely chopped.

  2. In large bowl mix 2/3 of the chopped vegetables with ground beef, 1 teaspoon paprika, cumin, oregano, black pepper, salt and 1 tablespoon no salt seasoning.

  3. Form 8-9 meatballs and let them sit for 20 minutes in refrigerator.

  4. Preheat skillet to medium high heat, add oil and the rest of chopped vegetables.

  5. Cook them for 2 minutes or until softened.

  6. Then add meatballs and caramelize them on each side. It will take about 2 minutes per side.

  7. To the skillet add salsa, water, 1 teaspoon paprika and 1 tablespoon no salt seasoning. Pop the lid on, lower the heat and simmer the meatballs for 20 minutes.

  8. Take the meatballs out of the skillet, open the heat on high and reduce the sauce to 1/2; it will take about 5-7 minutes and then remove it from the heat.

  9. Place back meatballs into the skillet and cover with thickened sauce.

  10. Cut the bun into 2, then take bottom of the bun add a little bit of cheese, then add 1 teaspoon sauce, then meatball, then 1 teaspoon sauce, then cheese and the last layer is second half of bun.
