Refried Soybeans

Ingredients
  • 1/4 c. oil
  • 1 chopped onion and 1 clove garlic, minced.
  • 2c cooked soybeans, mashed
  • 1-2 t chili powder
  • salt to taste
  • 3/4 c shredded cheese or cheese substitute.
Instructions

serves 4. Heat oil in skillet. Add onion and garlic and saute. When onion is soft, add soybenas, chili powder and salt. Cook in oil, stirring often; when oil is absorbed, sprinkle with cheese. Let stand covered until cheese is melted.
