Mushroom Almond Pate

This sauteed mushroom recipe is unlike most mushroom recipes. Identify a mushroom recipe full of flavor and make this roasted almonds recipe. Use jumbo raw almonds to get the health benefits of almonds in the pate.

Serves: 6

Ingredients
  • 2 tablespoons margarine
  • 1/4 cup onion, chopped
  • 1 clove garlic, minced
  • 1 1/2 cups mushrooms, sliced
  • 1/2 teaspoon tarragon
  • 1 cup blanched whole almonds
  • 1 tablespoon lemon juice
  • 2 tablespoons soy sauce
  • 1 dash white pepper
  • 2 tablespoons cream cheese, optional
  • Slivered or finely chopped almonds, optional
  • Fresh parsley sprigs, optional
  • Pimiento strips, optional
  • Sweet red pepper strips, optional
Instructions
  1. In a large skillet, melt margarine. Add onion, garlic, and mushrooms. Saute until tender but not browned. Add tarragon, stir until it is softened.
     
  2. Pour mixture into a bowl of food processor. Add remaining ingredients. Process until mixture is smooth.
     
  3. Add cheese if you prefer a more spreadable consistency.
     
  4. Spoon into a serving bowl. Top with garnish of your choice.
