Black Bean Patties

Ingredients
  • 2 1/4 cups cooked black beans rinsed and drained
  • 4 tblsp onion chopped
  • 2 tblsp red pepper chopped
  • 2 tblsp whole wheat flour
  • 2 tblsp cilantro, chopped
  • 1 tsp basil
  • 2 tsps cumin
  • pinch of cayenne
  • 2 slices mozzarella cut into thirds
Instructions

Mash beans with a fork, add onion, red pepper, flour, cilantro, and spices and mix well. Moisten your hands and form 6 cakes. Lightly oil a large skillet, and saute 3 burgers at a time, pressing the burgers down a little with a spatula. Cook several minutes on medium to medium high heat. Turn over and put a strip of mozzarella on top of each burger. Cover skillet with a lid and cook 2 more minutes until the cheese is melted. Serve as you would a regular hamburger patty.
