Avocado Veggie Burgers

Ingredients

  • 1 medium avocado
  • 1 cup cooked soybeans
  • 1/2 small onion, chopped
  • 1 teaspoon prepared mustard
  • 1 tablespoon tomato puree
  • salt
  • whole wheat bread crumbs

Instructions

1. Mix all the ingredients except bread crumbs together in a blender or food processor, and blend until smooth.

2. Put mixture into a bowl and add bread crumbs until the mixture sticks together enough to be formed into 2 patties. Make two burger shaped patties and fry in oil until they're browned. Serve on buns with your favorite burger fixings!

Avocado burgers? I am not a big fan of soybeans and I love black bean burgers so I am going to try these with black beans. These are super healthy. You could double or triple the recipe and freeze some for later. That is what I like to do with my veggie burgers. Take them out of the freeze and heat them up in the oven or on top the stove.

I love avocado. Its such a great bread spread .Normally i mash it up with a little pinch of garlic and salt to taste.I have never made an avocado burger before...well at least not like this. cannot wait to see how it goes.
