Add some sweetness to ordinary rice with this healthy Apple and Brown Rice Pilaf with Thyme. The apple and onion add a nice texture to the firm brown rice.

Serves: 4

Preparation Time: 5 min

Cooking Time: 25 min

Ingredients
  • 1/2 onion, minced
  • 1 tablespoon vegetable oil
  • 1 1/2 cups quick cooking brown rice
  • 1 1/4 cups low sodium broth
  • 1/2 teaspoon dried thyme, crushed
  • salt and pepper to taste
  • 2 Rome apples, cored and diced
  • 2 tablespoons parsley, chopped
Instructions
  1. Saute onion in oil in non-stick skillet until tender; stir in rice and brown slightly.
     
  2. Stir in broth, thyme, salt and pepper; bring to boil.
     
  3. Cover tightly and reduce heat; simmer 15 minutes.
     
  4. Remove from heat; stir in apples and parsley. Serve warm or cold.
