Sauteed Spinach

Sauteed Spinach is a great little side to add completeness to any meal. This sauteed spinach recipe is simple and easy to make. The spinach comes out soft and delicious; your family will never skip spinach again!

Ingredients

  • olive oil or butter, to grease
  • 1 shallot, finely minced
  • 1 clove garlic
  • salt, to taste
  • pepper, to taste
  • 1 or 2 wedges lemon
  • white wine, to taste
  • fresh spinach, washed and dried

Instructions

  1. In large pan, heat either olive oil or butter.
     
  2. Saute finely minced shallot and garlic in large pan, taking care not to burn (use about 1 clove of garlic for 2 servings spinach).
     
  3. Add salt and pepper, lemon juice, and white wine.
     
  4. Stir this well, then place double handfuls of spinach into pan, tossing well with the sauteed lemon juice mixture.
     
  5. Leave on only long enough to wilt slightly.
     
  6. Serve immediately.
