American Home Fries

Home fries have become a staple for any American breakfast. Cooked with fresh onions and garlic, the flavors go perfect with your eggs and bacon. Add salt and pepper, or enjoy with a side of ketchup. Potato recipes are the best breakfast side.

Ingredients

  • 2 russet potatoes, rinsed
  • 2 cloves garlic, minced
  • 1 large yellow onion, sliced
  • 1/2 red bell pepper, optional
  • 2 1/2 tablespoons to 3 tablespoons of butter
  • salt and pepper, to taste
  • paprika, to taste

Instructions

  1. Chop the potatoes into slices. 
     
  2. In a well seasoned cast iron pan, melt 1 tablespoon of butter. Place a single layer of potato slices on the bottom of the pan.
     
  3. Add a light layer of sliced onion and minced garlic. Sprinkle with salt and pepper. Add another layer of potatoes, more butter, another layer of onion slices and garlic, and sprinkle again with salt and pepper. Keep layering until you've used up your potatoes onions and garlic.
     
  4. Lower the heat to medium and cover the pan. Let cook for about 10 minutes, until the potato layer at the bottom is nicely browned.
     
  5. Gently flip the potatoes over, a section of the pan at a time, so that the layer that was on the top is now on the bottom, and the browned potatoes are now on the top.
     
  6. Add another tablespoon of butter, chopped into seperate chunks.  Cover and let cook for another 5-10 minutes, until the bottom layer is browned.
     
  7. Once the bottom layer is browned, remove the lid of the pan and let continue to cook for 5 more minutes.

Not so easy to turn over because the bottom potatoes are now softening and the top ones are still firm but, that aside, this is quite a tasty recipe. We added a chopped chili fresh from the garlic (just because we felt like it, lol!). It was very good and this recipe has already been added to our list of good ones!

How many servings does this make?

I would say this would be 1 serving for ME! I love fried potatoes.
