Sugar Cookie Bars

These Sugar Cookie Bars are the perfect treat to bring along to a party, especially a Valentine's Day themed party or gathering. It's a quick and easy cookie recipe that kids and adults won't be able to get enough of.

Ingredients
  • For Cookie Bars:
  • 1 cup butter, room temperature
  • 2 cups sugar
  • 4 eggs
  • 2 teaspoons vanilla
  • 5 cups flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • For Frosting:
  • 1/2 cup butter, room temperature
  • 1/2 cup shortening
  • 1 teaspoon vanilla
  • 4 cups powdered sugar
  • pinch of salt
  • 5 tablespoons milk
  • colored sprinkles and red food coloring (if desired)
Instructions

For Cookie Bars:

  1. Preheat oven to 375 degrees F.
     
  2. Cream butter and sugar until fluffy. Add eggs, one at a time, mixing after each egg. Add vanilla & mix well.
     
  3. In a separate bowl combine flour, salt and soda and stir with a whisk to combine.
     
  4. Add to wet mixture and mix just until combined. Spread on a greased baking sheet (use a 13 x 18 pan).
     
  5. Bake at 375 degrees F for 10-15 min, until light golden brown or until a toothpick comes out clean. Cool completely and frost.
     

For Frosting: 

  1. Combine butter and shortening until smooth and creamy. Add vanilla and salt.
     
  2. Add powdered sugar in 1-2 cup increments until combined, and then add milk & mix until smooth and spreading consistency. Spread over cooled cookie.
