Serves: 4

Cooking Time: 3 hr

Ingredients
  • STUFFING:
  • 1 loaf of bread (long French/Italian is best), shredded into small pieces
  • 1 large Spanish onion, diced
  • 1 clove garlic, minced
  • 1 stalk celery, chopped
  • 1/4 cup margarine
  • 1 cup mushrooms, sliced
  • 1 cup chicken broth
  • 2 eggs
  • 1/2 teaspoon poultry seasoning
  • TURKEY:
  • 1 large or extra large turkey
  • salt, to taste
  • pepper, to taste
  • Paprika, to taste
  • 4 large baking potatoes, cut into bite size pieces
  • 6 large carrots, cut into bite size pieces
  • 1 1/2 cups mushrooms, sliced
  • 2 onions, cut into bite size pieces
  • 1 to 2 tablespoons flour
  • flour
Instructions

STUFFING:

  1. Saute onions, garlic, and celery in margarine.

  2. Add mushrooms after the onions are half-translucent.

  3. Place shredded bread into a large bowl.

  4. Pour vegetable mixture over bread, and toss together until mixed.

  5. Add broth slowly while mixing until bread is moist, but not drenched.

  6. Add eggs and seasoning. Mix well, but do not pack.

TURKEY:

  1. Preheat oven to 350 degrees F.

  2. Wash Turkey, inside and out. Pat dry.

  3. Sprinkle liberally inside and out with salt, pepper, and paprika.

  4. Stuff cavity of turkey with stuffing, packing lightly.

  5. Loosen gap between skin and breast, and place a layer of stuffing underneath the Turkey skin. The stuffing may form a small mound at the front of the cavity.

  6. Open oven cooking bag and shake flour into it.

  7. Place turkey in bag, and put in large pan.

  8. Cut about six 1/2 inch slits in the top of the bag.

  9. Scatter potatoes, carrots, mushrooms, and onions around the turkey. When the turkey is done, these will have basted in the juices and will taste great!

  10. Place the turkey in the oven, and bake until done. (For a 12 pound bird, this would be about 2.5 to 3 hours. Use a thermometer in bird's thigh to check temperature.)
Notes

If you wish to keep the stuffing separate, place in a pan and bake at 350 for 45-50 minutes. For a 12 pound bird, double the recipe.

Serve Turkey with cranberry sauce.
