Oyster Stuffing

This is one of the best Thanksgiving recipes for adventurous eaters. This oyster stuffing puts a non-traditional spin on an old favorite. Your Thanksgiving guests will thank you for the change.

Ingredients

  • 1 bay leaf
  • 1/2 cup celery, chopped
  • 1/2 cup onion, chopped
  • 1/4 cup butter
  • 6 cups dry bread cubes
  • 1 tablespoon parsley, snipped
  • 2 eggs, beaten
  • 1 pint raw oysters, chopped
  • 1 teaspoon poultry seasoning
  • 1 teaspoon salt
  • dash of pepper, to taste
  • 1/8 cup reserved oyster liquor
  • 1/8 cup milk

Instructions

  1. Cook bay leaf, celery and onion in butter until tender.
     
  2. Discard bay leaf.
     
  3. Add dry bread cubes and snipped parsley to butter mixture. Mix thoroughly.
     
  4. Add eggs, oysters, poultry seasoning, salt and pepper.
     
  5. Add milk to oyster liquor to make 1/4 to 1/3 cup.
     
  6. Add enough liquid to stuffing to moisten.
