Cornish Hens with Sweet Autumn Stuffing

Ingredients
- Cornish Game Honeyed Hens:
- 2 premium all-natural Cornish hens
- 1/8 cup butter
- 2 tablespoons honey (orange sage)
- pepper (to taste)
- ginger (to taste)
- Cran-Apple Nut Stuffing:
- 1 package seasoned stuffing
- 1 Fuji apple, diced
- 2/3 cup fresh whole cranberries
- 1 cup celery, chopped
- 1/2 cup walnuts, chopped
- 1/2 cup European style butter
Instructions
Cornish Game Honeyed Hens:
- Preheat oven to 350 degrees F.
- In a sauce pan, melt butter and stir in honey.
- Wash hens. Place in baking dish.
- Season hens. Bake for one and a half hours or until cooked. Baste periodically with honey butter.
- Cover with foil the last 10 to 15 minutes. (Use a meat thermometer; when it reads 180 degrees F, it’s done.)
Cran-Apple Nut Stuffing:
- Preheat oven to 350 degrees F.
- In a frying pan, use a small bit of European style butter and sauté fruit, celery, and nuts.
- Put sautéed mixture in a glass baking dish. Pop into oven at 350 degrees F for about an hour.
