Leftover Turkey Bean Soup

Try this Leftover Turkey Soup recipe the day after Thanksgiving for a filling treat! Leftover turkey soup recipes can be bland, but this one if fantastic and full of flavor.

Ingredients

  • 1 cup dry navy beans
  • 8 cups water
  • 2 teaspoons salt
  • 1 medium onion, chopped
  • 1 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon poultry seasoniong or sage
  • 1/8 teaspoon pepper
  • 17 ounces can corn, drained
  • 2 stalks celery
  • 1 cup carrots, sliced
  • 1 cup turnips, chopped

Instructions

  1. Rinse dry navy beans.
     
  2. In 5 quart Dutch oven, combine beans, water and salt. Bring to a boil. Reduce heat.
     
  3. Cover and let stand for 1 hour. Do not drain.
     
  4. Break meaty turkey carcass to fit pot.
     
  5. Add to beans. Add onion, Worcestershire sauce, poultry seasoniong and pepper.
     
  6. Cover and simmer for 1 hour. Remove frame. Cool.
     
  7. Cut meat and chop.
     
  8. Add to soup with corn, celery, carrots and turnips.
     
  9. Cover and simmer for 30-40 minutes, until tender.
     
  10. Serve with thick slices of French bread.
