Beer Cheese Soup with Bacon

Stay inside, turn on the football game, and cook up a batch of this Beer Cheese Soup with Bacon. This easy beer cheese soup recipe is a definite crowd-pleaser and the perfect way to warm up on a cold winter day.

Ingredients

  • 6 ounces vegetable oil
  • 1 1/2 pound onions, coarsely chopped
  • 1 1/4 pound potatoes, diced
  • 1 pound carrots, diced
  • 1 pound celery, sliced
  • 1 can bacon and Cheddar cheese sauce
  • 2 cups beer
  • 1 quart chicken stock
  • 1 1/4 pound mixed vegetables, frozen
  • 1/2 teaspoon paprika
  • 1/2 teaspoon white pepper
  • 1/4 teaspoon liquid smoke flavor
  • 2 tablespoons parsley, chopped

Instructions

  1. Place vegetable oil in large stockpot. Add onion, potatoes, carrots and celery and saute 25 to 30 minutes, or until vegetables are cooked.
     
  2. Add cheese sauce, beer, chicken stock, frozen vegetables, paprika, white pepper, liquid smoke flavor, and parsley.  Combine thoroughly.
     
  3. Simmer 20 minutes over low heat, stirring occasionally.
