Bean Soup with Ham

Ingredients

  • 1 pkg dried mixed beans
  • 1 meaty hambone
  • 1/2 onion, chopped
  • 2 cloves garlic, chopped
  • 1 large can whole tomatoes
  • 4 or 5 drops hot sauce or to taste
  • juice of 1/2 small lemon

Instructions

Rinse beans, cover with water, and soak overnight. Drain and rinse beans, cover with fresh water, and add hambone. Bring to a boil, cover, and simmer for approximately 1 hour. Remove the hambone and allow it to cool slightly. Remove the ham from the bone, cut into small pieces, and add back to the pot. Add onion, garlic, tomatoes, and hot sauce. Return to a boil, cover, and simmer for 1 to 1 1/2 hours or until beans are tender. Stir in lemon juice and serve.
