Bean Soup

Ingredients
  • 2-inch chunk salt pork
  • 1 medium onion, chopped
  • 1/4 ts ground nutmeg
  • 1 t chopped parsley
  • 8oz can tomato sauce
  • 16 ounces can pinto beans
  • 1/2 ts salt
  • 1/2 pound macaroni
Instructions

Slice pork and saute 'til browned. Add onions and saute until limp. Add nutmeg and parsley, simmer slightly. Add tomato sauce and 2 cups water. Cover, simmer 1 1/2 to 2 hours. Put beans in large pot, add 4 cups water and salt. Strain the sauce from the pork and pour over the beans. Put 3-4 ladles beans and mash thru strainer. Add macaroni, simmer until done.
