I love loaded baked potato soup! I like to add the bacon to the soup instead of just using as a garnish. It is pretty filling. It is warming clear to the soul. I make different varieties of potato soup and this is, by far, my favorite. It is the kind of meal that seems like it would take a while, but it doesn't.

The name of this soup really caught my eye - what a great idea to turn a favourite comfort food into a soup! This is a perfect weeknight meal or weekend lunch! You could even set up bowls with different toppings and let everyone customize their soup like a baked potato bar! The recipe doesn't specify the type of potato to use, but I'm guessing a starchier type like a russet would give better results than say Yukon Gold? Either way, it sounds very yummy!
