One Pot Clam Chowder

This one pot clam chowder can be made in one large stock pot, no other dishes required. One pot cooking recipes are great staples for any cook, and this clam chowder recipe is a great one to add to your list.

Ingredients

  • 4 large onions, chopped
  • 3 carrots, finely chopped
  • 4 celery stalks, sliced and chopped
  • 8 medium potatoes, peeled and cubed
  • 1 tablespoon salt
  • 1/2 teaspoon pepper
  • 4 cups milk
  • 2 cups Cheddar cheese, grated
  • 2 cans clams, drained
  • 1 teaspoon dried parsley

Instructions

  1. Saute onions, carrots, and celery in a heavy saucepan until tender.
     
  2. Add potatoes, salt, and pepper and cover with boiling water. Simmer, covered, for 20 minutes or until potatoes are tender.
     
  3. Add milk and cheese, stirring until cheese is melted.
     
  4. Add clams. Heat through, but do not boil. Stir in parsley.
