Old Timey Country Potato Soup

Indulge in the comforts of old-fashioned cooking with this classic recipe for Old Timey Country Potato Soup. With just a few simple ingredients and about 40 minutes, you can create one of the best soups imaginable. Sometimes simplicity is the key when looking for a great potato soup recipe, and this one is as simple as they come.

Cooking Time: 40 min

Ingredients
  • 4 peeled potatoes, cut lengthwise into quarters, then thinly sliced (4 cups)
  • 1 cup onions, thinly sliced
  • 1 teaspoon celery salt
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups water
  • 2 cups milk
  • 1/4 cup parsley, chopped
Ingredients
  • 1/4 cup parsley, chopped
Instructions
  1. Place potatoes in a large suacepan and add onions, salts, pepper and water. Bring to a boil. Cover and simmer 30 minutes or until vegetables are tender.
     
  2. Add milk and parsley. Cover and simmer 10 minutes longer. Season to taste.
     
  3. Optional: Sprinkle each serving with 1 tablespoon shredded aged cheddar cheese before serving.
