I love minestrone soup and it seems everyone has their own little touches as to what ingredients to include. I've never made it with cheese tortellini before, and I'm surprised that the thought hadn't occurred to me. It seems like such a logical replacement for plain elbow macaroni, and this may become a permanent part of my recipe. I agree it's a great comfort good.

What is better than a nice big bowl of minestrone soup? A big bowl of minestrone soup with Tortellini. Gran's Comforting Tortellini Minestrone is a delicious, hardy minestrone soup taken up a notch with Tortellini. It's an easy recipe to follow and make, and one that your family will enjoy over and over.

I always keep a bag of frozen cheese tortellini in my freezer since it is so versatile and cooks very quickly. It is wonderful in soups like this one, as well as cold pasta salads, or just to toss with some warm sauce for a ten minute meal. I love that this soup has zucchini and summer squash, two of my favorite things to grow in my garden!

The soup looks like a lot of ingredients, but sounds delicious! Even the picture of it is making me hungry. I make minestrone soup but I have never put tortellini in it. This will make it even more of meal. I think I'll have a load of homemade bread on the side.

Love the addition of cheese tortellini here. Sometimes soups don't leave a feeling of fullness but adding this cheese filled pasta would add sustenance. Add a good crusty bread and this would make a hearty meal. I also love to freeze recipes like this in single portions-perfect for taking to work. Thanks for sharing-pinned for definite future use!
