Authentic Amish Potato Soup

This recipe for Authentic Amish Potato Soup has all of the classic components of a great old-fashioned potato soup. With onion and bacon adding delicious flavor and rivlets adding an extra bit of texture, this rich and creamy soup is one of the best Amish cooking recipes we've come across. Make it once and it's sure to become a staple in your household!

Serves: 6

Cooking Time: 20 min

  • 4-5 medium potatoes, peeled and cubed
  • 1/4 cup onion, finely chopped
  • 1/2 teaspoon pepper
  • salt, as needed
  • 4 cups chicken stock or water
  • water to cover potatoes
  • 2 slices bacon, fried (not too crisp)
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 large egg
  1. Bring stock or water to a boil and add onions, potatoes and other seasonings. Boil about 20 minutes until potatoes are tender.
  2. Stir in cooked bacon.
  3. Prepare the rivlets: Combine flour and salt. Mix in egg until mixture resembles coarse crumbs.
  4. Stir rivlets into soup mixture and cook until they are done.

What the heck is a rivlet? I never heard of such a thing... It is listed in the recipe as if it is somethng everyone knows... I understood after reading through the recipe, but I never heard them called rivlets before... I have to try this soup rivlets and all...

I am assuning this was a typo. It actually should be a rivel which is a small coarse noodle. For a variation you can look for a recipe for spaetzel which in German means little sparrows. The recipe can be varied immensely from adding dark beer instead of milk herbs of your choice and liking. Spaetze is almost a pancake consistency that you pit through a colander with pencil diameter holes and force into salted boiling water til they float
