Allie's Gumbo

Don't know what to cook for dinner tonight? Allie's Gumbo is a simple and easy chicken gumbo recipe made with black beans, corn and meatballs to give it a truly unique taste.

Ingredients
  • 1 pkg (3 legs/3 thighs) chicken - cooked, skinned, deboned, chopped, save chicken stock
  • 1 pound ground sausage or bacon - made into small meatballs and cooked
  • 2 (14.5-ounce) cans chicken broth
  • 1/2 large green pepper,chopped
  • 1/2 large yellow onion, chopped
  • 1/2 large red pepper, chopped
  • 1/2 bag frozen corn
  • 2 cups instant brown rice
  • 1 (16-ounce) can pinto beans
  • 1 can (19-ounce) can black beans, drained
  • 1 14.5-ounce) can chopped tomatoes with green chilies
  • 2 packets brown gravy mix
  • salt, pepper and cajun seasoning, to taste
Instructions
  1. Set the meat aside.
     
  2. In large stock pot, add 2 - 3 cups of water.
     
  3. Add saved chicken stock (above) approx 1 - 2 cups & chicken broth.
     
  4. Add green pepper, red pepper, yellow onion and frozen corn.
     
  5. Bring to a boil and let veggies cook for a bit to soften.
     
  6. Add brown rice, pinto beans, black beans, chopped tomatoes with green chilies.
     
  7. Add in chopped/cooked meat from above.
     
  8. Take some of the hot liquid from the pot and dissolve the packets of brown gravy mix. Add to gumbo.
     
  9. Add seasonings to your taste.
