All American Hamburger Soup

You can still enjoy delicious ground beef flavor when the weather gets colder, just make a batch of this All American Hamburger Soup! With peppers, celery and tomato added to the mix, this simple beef soup is loaded with great flavor and texture you'll love. Ingredients

  • 1 1/2 pound ground beef
  • 1 (16-ounce) can tomatoes, chopped
  • 6 ounces tomato juice
  • 7 cups water
  • 1/2 pound fresh green beans
  • 1 green pepper, diced
  • 1 cup celery, diced
  • 1/2 cup celery greens
  • salt and pepper, to taste
  • 2 tablespoons light soy sauce
  • 1 bay leaf
  • 1/2 teaspoon paprika
  • 1/2 teaspoon thyme
  • 1/2 cup pearl barley
  • 2 carrots, sliced
  • 1 large potato, diced

Instructions

  1. Brown hamburger, drain and add to pot.
     
  2. Combine all ingredients except the carrot and potato and bring to a boil. Simmer 45 minutes to 1 hour.
     
  3. Add carrots and cook 10 minutes.
     
  4. Add potato and cook 20 minutes.
