All Day Kitchen Sink Beef Soup

When you're feeling lazy, especially during the winter, there's one recipe that is just perfect to fit your mood. This All Day Kitchen Sink Beef Soup recipe is so simple to prepare, you can putz around for hours while it cooks and then enjoy a delicious bowl of beef soup in the evening. Made with beef, potatoes, carrots, tomatoes, celery, garlic and more, you can easily see where this slow cooker soup recipe got its name. It has everything but the kitchen sink simmering in the pot!

Cooking Time: 6 hr

Ingredients
  • 1 pound stew beef, cubed
  • 1 can stewed tomatoes
  • 3 potatoes, peeled and diced
  • 2 carrots, peeled and pennied
  • 1 garlic clove, crushed
  • 3 peppercorns
  • 1 bayleaf
  • 1 celery stalk, chopped
  • 1 small onion, diced
  • 4 cups water
  • salt and pepper, to taste
  • 1/2 teaspoon thyme
  • 1 teaspoon parsley, chopped
  • 2 beef bouillon cubes
  • 1 tablespoon Worcestershire sauce
  • 2 cups frozen mixed vegetables
  • 1/2 cup red wine
Instructions
  1. Place all ingredients except frozen vegetables in slow cooker. Turn on low and cover; cook for 6 hours.
     
  2. Thirty minutes before serving turn up to high and add frozen veggies. Stir and cover.
     
  3. Remove the bayleaf before serving.
