Chobani Potato Gratin

Ingredients

  • 1 tablespoon unsalted butter, softened
  • 2 cups milk
  • 1 large garlic clove, smashed
  • 2 cups shredded Gruyère
  • 1 egg, slightly beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon freshly grated nutmeg
  • 1 cup Plain 0% Chobani Greek Yogurt
  • 2 pounds Yukon Gold potatoes, peeled and thinly sliced

Instructions

  1. Preheat oven to 400 degrees F.
     
  2. Butter 2-quart ovenproof baking dish.
     
  3. Heat milk with garlic until small bubbles appear. Add 1 cup cheese and whisk until melted. Remove garlic.
     
  4. Beat egg in bowl. Gradually whisk in hot milk, then salt, pepper, and nutmeg.
     
  5. In three additions, whisk in Chobani, whisking well.
     
  6. Add sliced potatoes and spread in prepared dish. Sprinkle remaining cheese on top.
     
  7. Bake for 1 hour to 1 1/4 hours, until golden brown and potatoes are soft when pierced with sharp knife.
