Cheesy Twice Baked Potatoes

If you love potatoes but are tired of the same old mashed variety, go for a different spud tonight. Make these twice-baked tasty taters with cheese, and you can be assured there won't be any leftovers.

Serves: 12

Cooking Time: 1 hr 30 min

Ingredients
  • 6 medium-sized baking potatoes
  • 4 tablespoons milk
  • 2 tablespoons margarine
  • 1/2 cup cheddar cheese, grated
Instructions
  1. Preheat oven to 350F degrees.
     
  2. Clean and bake potatoes until almost done, approximately 1 hour (longer if potatoes are large).
     
  3. Remove from oven and let cool long enough so that you can handle them.
     
  4. Cut them in half lengthwise and scoop out the insides and place in a bowl.
     
  5. Mash the potatoes with a masher.
     
  6. Add the milk and  margarine and mash some more to incorporate.
     
  7. Add the cheese and  mix thoroughly.
     
  8. Place the potato mixture back into the skins and bake at 350F degrees for about 30 minutes.
Nutritional Information

If you like your potatoes cheesier, increase the amount of cheddar to 3/4 cup, or even more. You may also substitute other types of grated cheese, or combine several for unique flavor.
