Baked Lentils with Cheese

This quick and easy recipe for Baked Lentils with Cheese makes a great healthy side dish to go with tonight's dinner or tomorrow's lunch. An easy side dish that is definitely worth a try!

Cooking Time: 1 hr 10 min

Ingredients
  • 1 (12-ounce) package lentils, rinsed
  • 2 cups water
  • 1 bay leaf
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon majoram
  • 1/4 teaspoon sage
  • 1/4 teaspoon thyme
  • 2 large onions, chopped
  • 2 cloves garlic minced
  • 1 can tomatoes
  • 2 large carrots, cut in 1/8-inch-thick slices
  • 1 stalk celery, thinly sliced
  • 1 green pepper, seeded and chopped
  • 2 tablespoons chopped parsley
  • 1 1/2 cups sharp cheddar cheese, shredded
Instructions
  1. Preheat oven to 375 degree F.
     
  2. Place lentils in a shallow 3-quart casserole or 9 by 13-inch baking dish along with the water, bay leaf, salt, pepper, marjoram, sage, thyme, onions, garlic, and tomatoes and their liquid.
     
  3. Bake, covered, for 30 minutes.
     
  4. Remove from oven and stir in carrots and celery.
     
  5. Cover and bake for about 40 minutes more, until vegetables are tender.
     
  6. Remove from oven and stir in green pepper and parsley.
     
  7. Sprinkle cheese on top.
     
  8. Return to oven and bake, uncovered, for 5 more minutes or until cheese is melted.
