Acorn Squash with Applesauce

Acorn Squash with Applesauce complements many a meal, and can even stand alone as a healthy, vegetarian main course. Try this simple dish tonight.

Cooking Time: 2 hr 30 min

Ingredients
  • 1 medium acorn squash
  • 1 cup applesauce
  • 2 tablespoons cinnamon
Instructions
  1. Preheat oven to 350F degrees.
     
  2. Cut acorn squash in half.
     
  3. Scoop out and discard seeds.
     
  4. Fill the center of each half with applesauce and cinnamon to taste.
     
  5. Place squash halves in a large, shallow baking pan and bake, uncovered, at 350F degrees for about 2-1/2 hours or until the squash is tender.
