Baked Scallops

There are lots of different recipes for bay scallops, but this one is particularly nice because it involves no frying, and it's really easy. With just a few basic ingredients you probably have in the house (you don't even need salt and pepper!) and less than an hour, you can make a terrific meal!

Serves: 6

Cooking Time: 35 min

Ingredients
  • 1 pound bay scallops
  • 1/4 pound Ritz crackers
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon oregano
  • 3/4 teaspoon thyme
  • 1 can cream of mushroom or cream of celery soup
  • 2/3 cup milk
  • Paprika
Instructions
  1. Preheat oven to 375F degrees.
     
  2. In a 9 inch round dish, mix soup and milk and set aside.
     
  3. Break up 1/3 of the crackers and mix a 1/3 of the spices; coat half of the scallops, then place in dish with soup mixture.
     
  4. Repeat with the remainder of the scallops.
     
  5. Break up the remainder of the crackers into very fine pieces and mix well with the remaining spices.
     
  6. Sprinkle mixture over the top of the scallops evenly.
     
  7. Sprinkle paprika over the top.
     
  8. Bake for 30 to 35 minutes. May be put under the broiler for a couple of minutes to put a light crust on top. Serve with rice on the side or under scallops. Good with a green vegetable and salad.
