Spinach Pie

Ingredients
  • 16 sheets filo
  • 1/4 cup melted butter
  • 6 cups washed, chopped spinach
  • 1 med. onion
  • 2/3 cup feta cheese
  • 2/3 cup cottage cheese
  • 2 eggs
  • 2 tsps fresh OR 1/2 tsp. dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions

Preheat oven to 400F / or 200C. Saute chopped onion in a little butter, add spinach, reduce heat to med/lowish and cover, cook about 3 min or until spinach shrinks down a little. Mix spinach and onion with cheeses, eggs and seasonings in large bowl. On a cookie tray, spread 8 filo sheets, one at a time, using a pastry brush to spread melted butter. Spread spinach and cheese mixture over buttered filo, and repeat buttering proceedure with top 8 sheets (you may need to melt a little extra butter). Tuck under the edges, (about a 1"tuck) Bake at 400F (200C) for about 20 min or until golden, let stand 5 minutes before cutting.
