Impossible Taco Pie

This meaty, cheesy concoction is a quick weeknight meal that will soon become part of your dinner routine. To make this delicious Impossible Taco Pie you'll need ground beef, cheddar cheese, taco seasoning and some Bisquick, along with other key ingredients. Ingredients

  • 1 pound ground beef
  • 1/2 cup onion, chopped
  • 2 envelopes taco seasoning, dry
  • 3/4 cup Bisquick
  • 1 1/4 cup milk
  • 3 eggs
  • 1 cup cheddar cheese, shredded
  • 1/4 head lettuce, shredded
  • 1 tomato, diced
  • 1/4 cup ripe olives, sliced

Instructions

  1. Preheat oven to 400 degrees F.  Grease a 10" x 1 1/2" pie plate or an 8" x 8" square baking dish.
     
  2. Cook and stir the ground beef and onion in 10" skillet until beef is brown, drain.
     
  3. Stir in seasoning mix, spoon into pie plate.
     
  4. Beat Bisquick baking mix, milk and eggs about 1 minute with wire whisk or hand beater or until almost smooth. Pour into pie plate.
     
  5. Bake about 25 minutes or until knife inserted in center comes out clean.
     
  6. Sprinkle with cheese. Bake about 2 minutes longer or until cheese is melted.
     
  7. Cool 5 minutes. Garnish with lettuce, tomato and olives.

This is a real easy dinner idea. It really is like a taco that is already put together and you eat with a fork. If you have other toppings that you like on your taco, add those. Maybe avocado or sour cream or some taco sauce or salsa. Mix beans or refried beans in with the meat if you like.
