Bacon Quiche

Ingredients
  • 6 slices cooked bacon crumbled
  • 1/2 medium onion chopped and sauteed in bacon fat
  • 1/2 green pepper diced and sauteed in bacon fat
  • 1 cup grated Swiss cheese
  • 1 1/2 cups half and half
  • 3 eggs, beaten
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon butter
  • 1 pie shell, pre-baked 3-5 minutes
Instructions

Spread bacon, onion, green pepper and Swiss cheese in bottom of pie shell. Mix together half and half, eggs, salt and pepper and pour into pie shell. Top with butter. Bake at 375 until knife inserted in center comes out clean (approximately 40-50 minutes). Let sit a few minutes before cutting. Makes 1 quiche.
