Buffalo Chicken Sandwiches

These Buffalo Chicken Sandwiches are a spicy hit at my home. Simple to make and loaded with flavor, use your favorite hot sauce to coat the chicken and dig in. This will top your other chicken recipes.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup blue cheese dressing
  • 1/4 cup flour
  • 1/4 cup butter, melted
  • 1 tablespoon hot pepper sauce or more
  • lettuce leaves
  • 4 sandwich rolls, split

Instructions

  1. Pound chicken to flatten slightly.
     
  2. Coat chicken with salad dressing, dip in flour.
     
  3. In a large skillet, melt butter over medium heat. Add chicken. Saute 10 minutes, turning once. Remove from heat. Remove chicken, set aside.
     
  4. Add pepper sauce to butter left in skillet and heat over medium heat. Add chicken, turn to coat. Cook chicken an additional 1 to 2 minutes. Serve on toasted buns with lettuce, top with more blue cheese dressing.

These look great! I've had some Buffalo Chicken sandwiches before, but not quite like this. I like the idea of dipping the chicken in the blue cheese dressing before dragging them through the flour. I'm a little puzzled about the hot sauce, though, since while it's on the ingredient list, it's not mentioned at all in the instructions. Is it simply used on the finished sandwich or is it used during the cooking process? Or both? I could see mixing the sauce with the salad dressing before dipping the chicken breasts in the mixture.
