Ingredients

  • 1 mango, chopped
  • 1/2 red onion, finely diced
  • 1 clove garlic, finely chopped or grated

  • cilantro (as much as you prefer)

Making your salsa could get addictive very quickly, especially when you have a recipe as impressive as this one. I'd leave the garlic out of this one because i feel it would overpower the rest of the flavours. Everything is fresh, and none of it would be left over by your guests.

I've never grilled fish before but love the idea of using aluminum foil to prevent it from sticking kmcartoonity...and nowadays they even have the nonstick foil to make sure your food won't stick to it. Just imagining what mango salsa would taste like has my mouth watering and I'm thinking maybe chicken or fish tacos would be my first attempt to enjoy it. Yum!

This Mango Salsa recipe is so good that your tastebuds really will stand up and demand more! The batch I made last weekend disappeared in a flash and the children were asking when I was going to make it again. The solution was to get the 2 teenagers busy chopping and mixing in the kitchen and this time we made a double quantity in the hope that it might last a little longer, lol!

Mango salsa is so very good. In the summer I love to spoon it on top of some fresh fish, wrap in aluminum foil, and cook it on the grill. No fish sticking to the grate! Then when I serve it I squeeze fresh lime juice over the top and give it a dollop of sour cream. So light and fresh. I just rough chunk everything and give it a few pulses in my small food processor.

I love using fruit in cooking. I would easily use this as a side to a lot of my dishes. Mango goes well with chicken. I can imagine this salsa adding amazing flavor to steak too. It looks so refreshing and I am sure it would lighten up any meal. It is a summer recipe and would go down very well in a hot country like South Africa.
