Pear Cheese Salad

Ingredients
  • 1 large can pear halves
  • 1 box of cream cheese softened
  • salad dressing (not mayonnaise)
  • chopped pecans
  • sugar to taste
  • yellow and red food coloring
  • 1 inch leaves, silk or real
  • Lettuce leaves
Instructions

Combine softened cheese and salad dressing. Use enough salad dressing so that the filling can be piped or spooned easily. Add sugar to taste and pecans to cream cheese. Set aside. On paper towels pair the pear halves by size as much as possible. Make sure they are intact. Dry the halves a little and lay flat side down. Take a swab and put yellow food coloring on the tip and rub on the rounded part of the pear spreading evenly. It should not be very dark. Do this to the other halves. Use another swab and do the same with the red coloring. It should give the impression of ripe pear halves. Let the halves sit for a few minutes to let the coloring absorb, then blot off the rest. Wash and dry lettuce leaves and arrange on a serving platter. Take one pear half and place on round colored side and fill with cream cheese mixture. Put another pear half on top so that the both colored sides are showing. Do this to all the pear halves. To make the pears more realistic take shrub leaves (unsprayed and washed), two per pear and stick them at the top where the natural leaves would be. Small silk leaves from a craft store will do. Arrange prettily on the bed of lettuce, cover and refrigerate until serving time.
