Ginger Saled Dressing

Ingredients

  • 1-inch piece ginger, peeled and minced
  • 2 large shallots, minced
  • 1/4 cup rice wine vinegar
  • 1 cup extra-virgin olive oil
  • juice of 2 limes
  • 2 tablespoons soy sauce
  • 2 tablespoons dark sesame oil
  • salt
  • freshly ground pepper

Instructions

Combine the ginger, shallots, vinegar, olive oil. lime juice and soy sauce in a small bowl. Whisking vigorously, add the sesame oil, salt and pepper to taste. Just before serving add 1 bunch cilantro or Italian parsley, roughly chopped.
