Ritz Cracker Eggplant Casserole

Serves: 6

  • 1/2 container of golden mushroom condensed soup
  • 1/2 cup mayonnaise
  • 1 egg, beaten
  • 1 tablespoon onion, grated
  • 1 cup cheese, shredded
  • 1 medium eggplant
  • 3/4 cup crushed Ritz crackers, about 15
  • 1 tablespoon butter
  1. Peel and dice eggplant, and cook in boiling, salted water for 10 minutes.
  2. Mix soup, mayonnaise, egg, onion, and cheese with parboiled eggplant. Place in a greased 1 1/2 quart casserole and cover with crackers.
  3. Bake for 25 minutes at 350 degrees F.

Why cook the eggplant? Won't it cook in the casserole?

I used cream of mushroom instead of golden-think you could taste zuchinni more.

I made it and really liked. I changed Eggplant to Zuchini, used Motzerella cheese. And there was no mention what to do with the butter-so I melted and put on top of crackers before putting in oven.

@Crafter, I think its pretty much whatever cheese you'd like. I suggest maybe a monteray jack, cheddar or mozzarella, but that's just my opinion. Thanks for the comment.

I tried this casserole and it is very good, I doubled the recipe, butter the dish and drain the eggplant in a clollander while you mix the ingredients, bake uncovered. makes about 6 servings. it was not soggy. Josie

Tried it and I agree with other comment it was too soggy .needed more filling to it.
