Summertime Vegetables & Rice

Having the perfect side dish recipe for dinner is always a treat. This wonderful rice recipe is made with fresh seasonal vegetables that pairs well with almost any dish. With a touch of cinnamon, it's flavor is unforgettable.

Ingredients
  • 1/3 cup extra virgin olive oil
  • 2 small carrots, finely chopped
  • 1 medium onion, finely chopped
  • 1 little zucchini, cubed
  • 1 bell pepper, cubed
  • 1 head of garlic, divided to cloves (not peeled)
  • 1 1/2 cups long grain rice
  • 1/4 cup cinnamon
  • 1/2 teaspoon cumin
  • 1/2 teaspoon ground coriander
  • pinch cayenne pepper
  • cayenne pepper
  • 3 cups water
Instructions
  1. Preheat deep frying pan or pot to medium high heat and add olive oil.
  2. When the oil is hot add carrots, onion and garlic and fry them until they get a little bit of color.
  3. Add cinnamon, cumin, coriander, cayenne, salt, pepper and mix with oil. Then add zucchini and bell pepper. Cook it for 2 minutes. Then add rice and mix with oil and vegetables. Add water and mix well with rice and bring to boil.
  4. Lower the heat and pop the lid on and cook for 5 minutes.
  5. Remove from the heat and let it stand for 10-20 minutes or until all the liquids are absorbed in the rice.
  6. Fluff the rice with fork and serve!
