Spanish Rice with Beef

Ingredients

  • 2 tablespoons butter
  • 1 medium onion, finely chopped
  • 1 pound ground beef
  • 1 pound 13 oz can tomatoes, undrained
  • 1 teaspoon salt
  • 1 teaspoon celery salt
  • 1/4 teaspoon pepper
  • 1 tablespoon sugar
  • 3 cups cooked rice
  • 2 cups grated American cheese

Instructions

Serves 6. Preheat oven to 325 degrees. Grease 2 1/2 quart casserole. Melt butter in large skillet; sauti onion and beef, stirring occasionally, until meat is browned and crumbly. Add tomatoes, salt, celery salt, pepper and sugar; simmer for 20 minutes. Remove from heat. Stir in rice and cheese. Turn into casserole. Bake in preheated oven for 1 hour. Keep in warm place for 20 minutes before serving.
