Caribbean Style Rice

Ingredients
  • 2 cups white rice
  • 1 whole chicken
  • 1 cup of peas
  • 1 blade of chive
  • 3 blades of chadon bene
  • 2 tsps salt & black pepper
  • 3 tbsp pepper (taste)
  • 2 tbsp coconut milk
  • 1 small piece of pumkin
  • 1 1/2 tbsp brown sugar
  • 3 tbsp oil
  • 1 tbsp salt butter
Instructions

Blend shadon bene and chive in blender with 2 cloves of garlic, 1 piece of hot pepper, and some water just about half the amount in the blender. Cut up chicken and clean well.Season wth blended ingredients and pepper. put oil to hot in pot and when hot add sugar and leave to brown. When sugar is brown to almost black add chicken and stirr around in the pot. Cover and allow to simmer for 15 -20 minutes till chicken is almost cooked add cocnut milk and cut up pimkin add salted butter and peas. Add rice then cover half way with water. Cover then allow to cook for another 30 minutes or until rice is soft. Serve with salad or avocado pear slices.
