Yeehaw Cowboy Bread

Homemade bread recipes never tasted so good as this fun Yeehaw Cowboy Bread. With simple simple ingredients and easy to follow directions, you'll want to make quick bread recipes like this one again and again.

Ingredients

  • 2 cups flour
  • 1 1/3 cup sugar
  • 1/2 teaspoon salt
  • 1/2 cup butter or shortening plus 1 tablespoon
  • 1 3/4 teaspoon baking powder
  • 1/2 teaspoon soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup buttermilk
  • 2 large eggs

Instructions

  1. Preheat oven 375 degrees F. Blend flour, sugar, salt and butter (shortening) together until crumb-like. Remove 1/2 cup and save for topping.
     
  2. Add to crumb mixture the baking powder, soda, cinnamon and nutmeg, mix thoroughly.
     
  3. Add buttermilk and eggs and mix until smooth.
     
  4. Pour into greased 9 x 13 pan. Sprinkle reserved crumbs over top of batter. Bake 20 minutes.

I think it is definitely misclassified with having for lunch and dinner. Cowboys must have a sweet tooth. I originally made it as I was looking for a quick bread recipe to have with supper. Living in Africa the power was soon to go out so I needed something quick. I used only 1 cup of sugar and I did not have buttermilk and used whole milk with about 1/3 cup soft margarine with the shortening. This will be something I will definitely continue to make in the future, but for breakfast or coffee time. All my kids loved it ( I have 12)

Sounds more like a coffee cake...bet it would be great as a mid-morning snack or an easy dessert, topped with fresh berries or peaches & whipped cream...I'd add some blueberries to the batter, and serve it warm for weekend brunch...

Sound wonderful, but wish there were more recipes for using the bread machine, heating up the whole kitchen for 1 loaf of bread is not economical.
