One-Pan Banana Bread

Ingredients

  • 1/3 cup vegetable oil
  • 1 1/2 cup ripe bananas, mashed
  • 1/2 teaspoon vanilla
  • 3 eggs
  • 2 1/3 cups Bisquick baking mix
  • 1 cup sugar
  • 1/2 cup chopped nuts

Instructions

  1. Pre-heat oven to 350 degrees F. Generously grease bottom of 9 x 5 x 3-inch loaf pan.
     
  2. Stir all ingredients in pan with fork until moistened; beat vigorously 1 minute.
     
  3. Bake until wooden pick inserted in center comes out clean, 55-65 minutes. Cool 5 minutes. Run knife or metal spatula around sides of loaf, pressing gently to loosen; remove from pan.

High altitude:

  1. Pre-heat oven to 375 degrees F.
     
  2. Mix all ingredients in bowl. Decrease baking mix to 2 cups and sugar to 2/3 cup. Add 1/4 cup flour.
     
  3. Pour batter into pan. Bake 50-55 minutes.

Sounds easy and quick...I have frozen bananas so all I have to do is thaw em out, and get to baking...will let you know how it turned out...
