Pressure Cooker Meatballs

Ingredients

  • 1 1/2 pound ground beef
  • 1/2 cup uncooked rice
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 small onion minced
  • 1 cup tomato juice
  • 3/4 cup water

Instructions

Combine meat, rice, salt, pepper, and onion. Heat tomato juice and water in cooker. Drop meatballs into juice mixture. Close cover and place pressure regulator on pipe, cook for 10 minutes with pressure regulator rocking slowly. Remove from heat and let pressure drop by itself.

We had this the other night. My son actually made the meatballs. He loved being able to make them. I just ran the pressure cooker. We added spaghetti sauce instead of the tomato juice, but other than that, we followed the recipe exactly. We also put some spaghetti noodles right on top of the meatballs. Spaghetti and meatballs all in one pot! It was a great meal. I'm keeping this recipe!
