New England Clam Chowder

It's always a treat to find good pressure cooker recipes, especially easy soup recipes! This New England clam chowder is no exception...it's delicious, it's easy, and the pressure cooker does all the work for you.

Serves: 8

Cooking Time: 15 min

Ingredients
  • 4 slices bacon, chopped
  • 2 cups chopped onions
  • 4 cups cubed potatoes
  • 2 teaspoons salt
  • 1/8 teaspoon pepper
  • 2 cups water
  • 2 cans (8-ounce) minced clams
  • 1 quart light cream
  • 1/4 cup butter
Instructions
  1. Sauté bacon and onions in pressure cooker over medium heat.
     
  2. Add potatoes, salt, pepper, and water. Close cover securely. Place pressure regulator on vent pipe.
     
  3. Cook 5 minutes at 15 lbs. pressure. Let pressure drop of its own accord.
     
  4. Drain clams.
     
  5. Slowly add clams, 1 cup clam liquid, cream and butter.
     
  6. Stir constantly.
     
  7. Simmer 10 minutes in open pressure cooker.
