Beef Stew and Dumplings

Hardly anyone thinks about using a pressure cooker these days, but they really are a great way to cook! You can have moist, tender beef for your beef stew recipe with even a cheap cut of meat. Now that's a bargain!

Serves: 4

Cooking Time: 25 min

Ingredients
  • 2 pounds stew beef, cubed
  • 1 tablespoon oil
  • 1 clove garlic, cut in half
  • 2 1/2 cups water
  • 1/8 teaspoon thyme
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 bay leaves
  • 1 (10-ounce) box frozen peas
  • 2 onions, chopped
  • 2 carrots, sliced
  • dumplings (recipe below)
Instructions
  1. Heat pressure cooker on stovetop; add oil and brown beef cubes and garlic.
     
  2. Remove garlic and stir in water, thyme, salt, pepper and bay leaves.
     
  3. Close lid securely.
     
  4. Bring to pressure and cook for 20 minutes.
     
  5. Remove bay leaves and stir in veggies.
     
  6. Add dumplings (recipe below).

 

Dumplings

  • 1 tablespoon shortening
  • 1.5 cups biscuit mix (such as Bisquick)
  • 2/3 cup milk
  • 1 egg, beaten
  1. Cut into the biscuit mix until crumbly.
     
  2. Combine the milk and egg; add to dry mixture. Stir until just blended.
     
  3. Drop by tablespoons on bubbling stew.
     
  4. Close lid securely and bring to pressure. Cook for 5 minutes.
